Baked Salmon with Cajun Spice

Salmon is a wonderful food choice for its higher (healthy) fat content, gorgeous color and adaptability. Just don’t overcook it, please! There is a natural sweetness to salmon that marries deliciously with a Cajun-style spicy blend. Serve this dish with a heap of sautéed greens and some quinoa.

Ingredients

  • 2 Tbsp butter
  • 2 Tbsp smoked paprika
  • 1 Tbsp cayenne pepper
  • 1 Tbsp onion powder
  • 1 tsp dried thyme leaves
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 4 (total weight 24 oz/700 g) salmon fillets
  • Salt and pepper

Directions

  1. Assemble, prepare and measure ingredients. Melt and cool butter. Preheat oven to 450°F/230°C. Lightly brush a baking dish large enough to hold salmon fillets in a single layer with some melted butter.
  2. In a small bowl, combine paprika, cayenne, onion powder, thyme, oregano, and basil.
  3. Place salmon fillets in baking dish, brush with remaining melted butter, and season with salt and pepper. Sprinkle seasoning mix evenly over fillets. Bake for 10-12 minutes, or until topping is light brown and salmon is still deep pink in center.
  4. To serve, place salmon on individual plates.
