Baked Salmon with Cajun Spice

Salmon is a wonderful food choice for its higher (healthy) fat content, gorgeous color and adaptability. Just don’t overcook it, please! There is a natural sweetness to salmon that marries deliciously with a Cajun-style spicy blend. Serve this dish with a heap of sautéed greens and some quinoa.
Ingredients
- 2 Tbsp butter
- 2 Tbsp smoked paprika
- 1 Tbsp cayenne pepper
- 1 Tbsp onion powder
- 1 tsp dried thyme leaves
- 1 tsp dried oregano
- 1 tsp dried basil
- 4 (total weight 24 oz/700 g) salmon fillets
- Salt and pepper

Directions
- Assemble, prepare and measure ingredients. Melt and cool butter. Preheat oven to 450°F/230°C. Lightly brush a baking dish large enough to hold salmon fillets in a single layer with some melted butter.
- In a small bowl, combine paprika, cayenne, onion powder, thyme, oregano, and basil.
- Place salmon fillets in baking dish, brush with remaining melted butter, and season with salt and pepper. Sprinkle seasoning mix evenly over fillets. Bake for 10-12 minutes, or until topping is light brown and salmon is still deep pink in center.
- To serve, place salmon on individual plates.
